Who We Are
Our Story
Gather Brewing was originally dreamt about from early 2015. Rachel, a professional international volleyball player, slowly scaled up her knowledge and brewing skills to prepare for the end of her sporting career. In 2018 she and her wife, Olivia, started to put down some roots and rented their current production space in Underdale, SA. Rachel continued to play volleyball six months of the year overseas and spent the other six months in the brewery perfecting her brew. At the beginning of 2020 she retired from volleyball and is now focused on Gather Brewing.
While Rachel was occupied with volleyball and kombucha, Olivia has been busy brewing babies and working part time as an accountant helping provide CFO services. Their first child, Mila, was born in 2019 and was swept away to spend a volleyball season in China at the age of 8 weeks. Zoe was born in 2021 and is living the second child dream of being held, while all eyes are on her toddler sister.
Our Brew
An ancient beverage with complex roots, kombucha is thought to be over 2000 Years old. At Gather Brewing we use slightly more modern techniques, to produce a traditionally brewed kombucha that’s fresh, raw and made right here in Adelaide.
Our premium tea is sourced direct from the grower in Yunnan, China for small batch and slow ferments to create a perfectly balanced kombucha base. Kombucha is brewed with 4 simple ingredients to create a bright and tangy beverage through fermentation. Tea, Sugar, water and SCOBY (Symbiotic Culture of Bacteria & Yeast).
It’s then ready to be infused with cold pressed ingredients (sourced locally when possible) to bring you a lightly sparkling, deliciously wild flavour, without additional sweeteners or additives.
Our Kombucha
Kombucha for us is as simple as a refreshing, fizzy beverage to have whenever we need a boost or are looking for something a little more exciting than water. Sometimes it’s to go along side a quick lunch at work to boost us through the afternoon, or to share with the neighbours while we’re all wrangling toddlers. Other times, we add a little extra and make Gingerella G&T’s or a Pale and Booch (like a shandy, with our fave The Suburban Brew No.2 Pale Ale and Hops & Dreams).
All flavours of our kombucha is less than 3.5% in sugar, compared to most soft drinks around 13%. Each and every brew is full of antioxidants from the tea, which may help decrease the risk of chronic disease, and three main organic acids produced through fermentation. These acids are believed to help regulate blood glucose levels, cholesterol and appetite, help support a healthy gut and lower inflammation, just to name a few.
